Savoury Cheese & Thyme Shortbread

2 Baking Sheets lined with non-stick paper
INGREDIENTS
For the meringue:
· 100g Salted butter softened
· 120g Extra mature cheddar grated
· 30g Parmesan cheese grated
· 120g Plain flour
· 1tsp Baking powder
· 30g Cornflour
· 1/2 tsp Salt
· 1 tsp Dried thyme
You will need two baking sheest lined with non stick paper
METHOD
1. Preheat the oven to 160C Fan 180C Conventional
2. In a medium bowl beat the softened butter and cheeses until combined
3. Stir in the remainder of the ingredients and using your hands bring together into a smooth dough
4. On a lightly floured work surface roll out the dough to approximately 3 mm thick and cut out circles using a 5cm cutter
5. Place biscuits on a baking sheet and lightly score the top with a fork
6. Place in preheated oven and bake for 15 - 20 minutes until lightly coloured
7. Allow to cool on a baking sheet for 10 minutes then transfer to a cooling rack.
8. Store in an airtight container.
