Salted Caramel Sauce

Delicious homemade caramel. It's easier than you think


Time: Less than an hour




INGREDIENTS

  • 220g Caster sugar

  • 40g Water

  • 1 tsp Lemon Juice

  • 100g Salted butter

  • 140ml Double cream

  • 1 tsp Vanilla extract

  • Salt to taste


Jar for storage



METHOD


  1. Place the sugar, water and lemon juice into a large saucepan cover with lid and heat gently until the until the sugar has completely dissolved and the mixture is bubbling. Remove the lid and continue to cook until the mixture is a golden caramel colour. NOTE allow to get to a good colour, the more colour the more flavour but do not burn it, it will taste awful.

  2. Remove from the heat and add the butter and stir vigorously, the mixture will splutter. Once the mixture is smooth return to the heat and simmer for 1 minute.

  3. Add the double cream, the mixture will splutter, whisk until smooth. Simmer for 1-2 minutes then remove from the heat and place in a bowl or jar to cool.

  4. Add the vanilla and a little salt to taste
