Dulce de Leche
Makes: Approx 400g
Time: 2 - 3 hours and loads of patience

INGREDIENTS
- 1litre Full fat milk
- 250g Granulated sugar
- 1/4 tsp Bicarbonate of soda
- 2 tsp Vanilla extract
- pinch of salt
METHOD
1 Place milk, sugar and soda in a large heavy bottomed saucepan, place on the heat and bring to a gentle simmer, it will look a bit frothy but don't worry that's absolutely fine.
2 Allow to simmer for approximately 2 hours stirring occasionally. As the milk reduces you will need to stir it more frequently as it may start to catch on the bottom of the pan
3 When it is the consistency you want stir in the vanilla and salt and taste. You may want to add more, I'll leave that up to your tastebuds.
4 Place in a sterilized jar and keep in the fridge.
I'm not sure how long it will keep, it doesn't last long in my house. Delicious in a chocolate and caramel tart, drizzled over ice cream or just eaten by the spoonful.
NOTE You can use any sugar but I use granulated as its cheap and does the job.
